The 2020 Maple Season - Week Three

Greetings from Harding Hill Farm!

Despite a pandemic and keeping our social distance, we continue to make maple syrup here at the farm. We’re still hoping to reach at least a ‘normal’ 500 gallons of total production. It will be challenging to get there this season with the generally mild weather. Meanwhile, our days involve early mornings hauling sap, late afternoons boiling at the sugarhouse, and evenings cleaning equipment and checking sap tanks.

As many of you know, we truly enjoy welcoming visitors and sharing the maple syrup production process. We did welcome visitors for the start of our season, but we now join the countless number of small businesses that must adapt to the spread of COVID-19, commonly known as coronavirus. Maple producers across New Hampshire, including ourselves, cancelled maple weekend and the remaining maple month activities. We are doing our part to protect ourselves and others. This comes with a great deal of disappointment, but we are fortunate enough to continue producing delicious maple syrup while the weather allows. As an alternative to our in-person tours, I’m doing my best to share our farm story on Facebook, Instagram, and Insta Stories. Be sure to give us a follow!

This Week’s Maple Production Update

We just wrapped up a night at the sugarhouse. The seasonal production count is up to 372 gallons of maple syrup produced from over 20,000 gallons of sap. The sugar content of our sap has been low this year. Generally, we like to see a sugar content near 2.0%, but today our sap measured at 1.3% sugar which means it takes about 66 gallons of sap to make 1 gallon of syrup.

We received an inch or so of snow this morning, but the sap just kept running. We picked up a full tank of sap at dawn and hauled more sap throughout the day. We collected 3,350 gallons of sap today and produced just over 55 gallons of syrup. That’s a pretty big production day for us. If the sap percentage was as high as 2.0%, we would have made over 85 gallons of syrup… goes to show how much sugar content can affect our results. For those curious about maple grades, we’ve been making a Dark Robust all week. All those Very Dark, Strong Flavor fans (formerly known as Grade B) will just need to wait a bit longer.

We are no longer open for visitors this season, but we can put together farm product orders for pickup or local delivery.

We ask that customers email info@hardinghillfarm.com to request a current list of available products. We do not post the price list on our website, because availability is constantly changing. We are running low on certain cuts of beef due to high demand.

Once you are ready to place an order - email or call Tyler (603-504-4121). We can arrange for you to pick up in our sugarhouse parking lot, or depending on your location, we can deliver locally. We take cash, check or credit cards. Harding Hill Farm is a small, family-run business. We ask for your patience while we do our best to give you access to quality maple syrup and beef.
